Renkon

Renkon (lotus root)

Renkon or lotus root has a reddish-brown skin and white flesh, with a distinctive floral or wheel pattern when cut in half. The recommended adult daily amount of Vitamin C can be obtained by eating only 100g of renkon, and it contains a stimulant that helps increase stamina. It should be cooked with vinegar to prevent discolouration, but not overcooked, to prevent loss of nutrients.
