Takenoko (bamboo shoot)

Takenoko (bamboo shoots) are a common ingredient in Japan, and are used as a vegetable. While freshly picked shoots may taste sweet, they soon take on a bitter taste, which is removed when the shoots are boiled. They are often bought ready boiled in cans or plastic packs, and can be steamed with rice in takenoko gohan, or in many other dishes.
